When it comes to beer, Dominique Lanno has been tripping out on quality over quantity since it was legal for him to do so.
“I’m not that into drinking beer that simply goes down smooth,” declares the unapologetic 29-year-old owner of La Bièrothèque, one of Little Italy’s premier destinations for local microbrews and other fine munchies. “Water goes down smooth. I’ll never force myself to waste my alcohol consumption on something that’s not worth it.”
And in that same spirit of choosiness, Dominique prefers to stock the shelves of La Bièrothèque with only the tastiest, most unique and high-quality ales Quebec has to offer. At the same time, he is in a constant bid to challenge first-time clients and beer geeks alike. “Yes, you want to please your clients,” he continues. “But you want to please them by getting to know them personally and not through a market study. Because I’ve realized I also have the power to influence what they want.”
