Cooking with parsley: pita bread stuffed with tabbouleh and beef

An irresistible combination of parsley, tomatoes, cucumbers and herbs, combined with the hazelnut flavour of bulgur, tabbouleh enhances the taste of grilled beef and cheese. Here is a foolproof pita bread recipe!

Pita stuffed with tabbouleh and beef

Preparation time: 10 minutes + 15 minutes to cook the bulgur

Serves: 4

  • 4 large pita breads cut into 28
  • Thinly sliced ​​roast beef
  • 4 thin slices (90 g or 3 z) Swiss-type cheese, cut into 28
  • Quartered cherry tomatoes
  • 1 medium avocado, peeled and sliced
  • 30 g (2 tbsp) hummus

For the tabbouleh

  • 200 g (1 1/4 cup) bulgur
  • 2 medium tomatoes, peeled, seeded and finely chopped
  • 1 small cucumber, finely diced
  • 75 ml (1 tbsp) fresh mint leaves, chopped
  • 30 g (3/4 cup) parsley leaves fresh, chopped
  • 2 spring onions, finely chopped
  • 30 ml (2 tbsp) olive oil
  • Juice of 1 lemon
  1. Prepare the tabbouleh: immerse bulgur in a little hot water for 15 minutes.
  2. Drain it and press to remove excess water.
  3. Mix with the remaining ingredients and season to taste.
  4. Fill the pita halves with tabbouleh, beef, cheese, tomato, avocado and hummus.

Variations

Parsley

  • This mixture of chopped parsley and garlic enhances a meal if added at the end of the cooking time.
  • It can also serve as a garnish, add a twist of lemon or anchovies or replace the parsley with thyme or tarragon.
  • The proportion is 20 g (1/2 cup) parsley to two cloves of garlic.

Chermoula

A mixture of Moroccan herbs and spices, Chermoula is a marinade for meat, poultry or fish. It can also be spread on dough and to form a crust on cooking. It's traditionally a blend of coriander and parsley along with a variety of other spices

  • For this recipe, mix 20 g (1/2 cup) each of coriander and chopped parsley with a small red onion, finely chopped, two cloves crushed garlic, five millilitres (one teaspoon) each of cumin, paprika, turmeric and chilli, 125 millilitres (1/2 cup) olive oil 30 millilitres (two tablespoons) of lemon juice.
