In 2010, Gilford Street saw an organic grocery store spring up just a few steps from the Laurier metro station. "In opening Marché 3 Piliers, we wanted above all to allow locals to eat healthily by offering local products from organic sources, at affordable prices."
"We" is Eric Aubut and Patrick Lévesque, two longtime friends who were motivated by a sense of environmental awareness to start a business that reflected them. The partners also own Zero Gravity, an indoor climbing and yoga centre, and their interests clearly gravitate towards a respect for the environment.
Eric and Patrick's initial motivation was to attract customers who don't necessarily eat organic, but who are conscious of their diet. Both felt a calling to "eat better" from a very early age. "The only way to safeguard the environment and honour the planet is to preserve the land that is currently being emptied of its nutrients. In the long run this is not sustainable," they explain. No wonder then that Marché 3 Piliers' motto is to be: "An ecological, social and economical market for sustainable food."
