What started in 2006 as Edible Vancouver — an online culinary concierge service offering trip planning, food tours and gourmet kayaking — evolved into Edible BC (an online boutique plus retail space in Granville Island Market), and now into Edible Canada. The latter, named by Profit Magazine for the past two years as one of Canada’s fastest growing companies, is a free-standing 80-seat restaurant and all-things-Canadian food shop, located right outside the Market.
“We want to define what Canadian food is, here and elsewhere in the world. It’s more than just maple syrup and smoked salmon,” smiles owner Eric Pateman. “One of the challenges Vancouver has with casual fine dining is that we are so dominated by the chain restaurants here, that the consumer has come to expect this as what food is. At Edible, we only buy from local farmers, only from CSAs, only Ocean Wise seafood, and the best quality meats. Our mission is to educate our customers on what and where their food is coming from.”
